White Chicken Chili

White Chicken Chili

3-4 chicken breasts
3 cans Great Northern White beans
1 can Ro-Tel tomatoes (I just get the "original" flavor)
1 can Chicken Broth
1 Tbl Oil
3 cloves minced garlic
4 oz chopped green chilies
2 tsp ground cumin
1 tsp oregano
1/2 tsp cayenne pepper
1/2 tsp salt
1 onion (I just sprinkle a bunch of minced onion)

Cook & dice chicken.  Saute onions in oil (unless you take my easy route- minced!)

Combine all ingredients in pot and boil softly for about 15 minutes.  (You can also use a crock pot- 6 hours on high).  Stir it up good!

Serve with shredded cheese and sour cream!
